Wild fermented in stainless steel tank for 2 weeks on full skins. Pressed to small aged barrels for malolactic fermentation. Racked into the bulk tank and then placed back into small barrels for 13-month maturation. Bottled unfiltered & unfined.
This is a low-sulfur wine, containing less than 50mg/L of total sulfur
