Field notes
Wild fermented in a mix of stainless steel tanks and barrels. Some were held over in a chilled tank for fresh brightness, and the rest were racked to barrels for malolactic fermentation + 6-month maturation. Then brought back together in the final blend.
Wild-fermented. It is also certified organic and certified vegan.
Tasting Notes
Bright red currants, plum, raspberries & strawberries, green leaves, complex. Rich and savory; firm, youthful, and round with a soft tannin structure.
