Minimum Wines grow its grapes on a 125-acre vineyard near Toolamba, on the Goulburn River in Victoria, which is certified organic and uses regenerative principles. They will never use synthetic inputs and only add naturally derived inputs needed to help improve soil microbiology, nutrient cycling, carbon sequestration, and vine health. A mindful wine, made for humans. With respect for the land they come from, and the people who drink them.
Wild-fermented. Unfined/Unfiltered. Low-sulphur. A v. minimal intervention wine, part-bucket fermented and hand-plunged twice daily to appease the gods of pleasure & woe. Heavy skin contact during fermentation = blood-red richness yet spirit-like levity. Then transferred to old barrels, small and large, for 11 months of maturation.
100% Sangiovese.
