Wild fermented. Unfined/Unfiltered. Low sulphur. A v. minimal intervention wine, part-bucket fermented and hand-plunged twice-daily to appease the gods of pleasure & woe. Heavy skin contact during fermentation = blood-red richness yet spirit-like levity. Then transferred to old barrels, small and large, for 11-months maturation.
