Winemaking
Organic viniculture, Herbicide-free farming, No added yeasts. Produced from typical varieties, cultivated ecologically with complete respect for the original terroir. The grapes are produced in vineyards of middle slope 50 years old, located in Mouraz, with granite soil and an altitude range of 400 m. After a strict selection of the vines, the grapes were transported in small boxes to the winery. After the crushing of whole grapes, it decanted for 24 hours. The natural fermentation occurred in stainless steel vats for about 6 weeks. The wine aged on its fine lees. It’s a field blend
Tasting
It shows a golden color with a bright citrus hue and a bouquet of lemon peel, roses, melon, and pear, with spicy notes. It’s fresh and mineral on the palate, with a long and delicate finish
Pairing
Perfect with soft cheese, pasta, and other Italian food, also very good with strong fish such as codfish, salmon, tuna, or even with white meat. Served best at 12 - 14 C
